Strawberry SURPRISE pie

Today is the day where the love is going to flow out of your kitchen

this pie is going to rock your socks off!
cause this is what pie tastes like in heaven!
I'm just going to tell you  once they will be coming back for more

so get your list made and get to the store
surprise anyone you love with a strawberry pie

 FIRST THE CRUST
1 cup white flour
1/3 c. oat bran
( found in the hot cereal section of your grocery store... use dry/do not cook) *NOTE
1 long graham cracker crushed
1/2 cup oil
(i use 6 TB margarine melted....trying to save some inches on the dreaded love handles)
2 TB milk
2 TB sugar

Dissolve 2 TB sugar in 2 TB milk
In a small bowl mix flour, oatbran, graham crackers
stir in melted margarine and sugar/milk mixture with a fork just until it all comes together
press  crust against bottom and sides of 9" pie pan
make sure the crust comes up from the edge of the pan forming a ridge (see pic on post above) 
cause you are going to be piling those strawberries sky high in this crust later.
don't fuss to much on this just get it in the pan
you don't want it to be over worked

Prick sides all the way aroundand bottom of pie crust with a fork
Bake 425* for 12 minutes
cool crust completely

*NOTE: if you don't have oat bran just use flour cause I'm pretty sure that was the original recipe before I tweeked it with wholesomeness. 

 NEXT THE FILLING
4 oz cream cheese
2 TB white sugar
4 oz cool whip
(I buy 8 oz cause you might want to serve with a dollop on top)
Mix cream cheese with sugar , fold in cool whip
chill until crust is cool


NOW THE YUMMY GLAZE
1 cup sugar(I USE 3/4 cup)
2 TB cornstarch
1 cup  cold water
3 TB strawberry or raspberry jello
2 tsp Real Lemon Juice


Mix sugar and cornstarch together in small sauce pan.
 Add water
Cook on medium heat stirring continually until mixture comes to a boil
boil for 5 minutes  KEEP STIRRING
Add jello, stir until dissolved
Add 2 tsp Real LEMON juice
Allow to cool

1 QUART STRAWBERRIES
i think this is the heaven part :)

wash and stem strawberries
cut into quarters or halves depending on the size of the strawberry
When glaze is completely cool stir in sliced strawberries
PLUS 2 TABLESPOONS WATER

If you don't have the creamy filling in your crust do it now

then pour in the glazed strawberries
  try to get the majority of the berries turned cut side down
cause when you set this on your table there is going to be some OOOHHHING going on!

Chill for a couple of hours before serving 
IT is going to be so worth it!


I have made this pie for valentines day and teacher appreciation.
Take the remainder of the cool whip (if you bought an 8 oz container) and
spread it on the top of the pie in the shape of a heart.
Add a heart shaped paper doily on the top of your pie covered with saran wrap
 and add a short note of appreciation.

PIE... it is food for the soul.

I've been on a bit of a pie kick here, ever since I was introduced to   Beth Howard here http://theworldneedsmorepie.com/    Now this my sweet friend is Iowa at it's best! 

Beth lives  in the American Gothic House In Eldon, Iowa and sells pies on the weekend from her Pitchfork Pie Stand. here  Her philosophy..... "healing the world, one pie at a time"

This summer while my husband did RAGBRAI
Registers Annual Great Bike Ride Across Iowa
for 3 days....
I shopped the quilt shops and
 looked forward to supper at the end of the day with PIE! 
Opps i mean with my HUSBAND and pie :)!  sorry honey :)



Bryce deserves pie after riding 60 miles on a bike.

 me driving as support  from town to town,
I need pie
because I'don't usually bake pie
but I love pie!




When you do RAGBRAI you must eat PIE!
 Cake I'm sorry, but i'm passing you by for pie! 

Quite honestly I didn't get my fill of pie
on RAGBRAI this year
because we didn't ride the whole week . 
 After meeting Beth i decided that
my family and the world around me
was being cheated for lack of pie in their life. 

so for the last 3 weeks i have made PIE!!  

                            1 Strawberry Cream pie
and 2 Colorado peach pies.  My family has been in pie heaven!





I thought this looks  so good I wanted to share it with the world
but my family couldn't wait for company.
we ate it all! 
( I'm sorry world there will be more to share soon.)
My daughter said,
 "I can't remember the last time you made this pie."
My son-in -love said,
" This is way better than the pie they serve at the resturant "
(where my daughter works).
and he also said,
"My friend can wait while I eat pie"
It has been so long ago that I made this pie.

Why ???
it is so good
I'm really not sure why. 
we eat fresh strawberries so fast they can't wait for pie i guess.

 It's SEPTEMBER 1 TODAY  hard to believe isn't it.
Labor Day is just days away,

I'm guessing there will be some sort of family gathering this weekend.
give summer one last hurrah at your house...
surprise them with september strawberry pie.
you don't have to be a pie crust wizzard to make this pie.

You CAN have PIE and Eat It Too!

to start
 STEP 1
find a newly FIVE year old  to help you , or any kid will do  ,
it is how things get passed down through the generations.

this is Emerson and she is my shadow and a happy helper!




 STEP 2
find you a long lost pie tin even if it is from a store bought pie,
make and bake the crust




smile at this accomplishment


STEP 3

think about how much God loves you and who you can share this love with
because love is not love until you give it away.
Love
  it is the secret ingredient
that will make this pie taste so wonderful.




STEP 4
put the cream ingredients in a bowl and hold your breathe while your cutie patootie
runs the mixer all by her self. 
She said to me
 "I can do this nanny! don't help me!"
when you are 5 you are confident!
I'm sure the bangles helped there.  :)

STEP 5

cook the glaze,  add strawberries and chill while you wait impatiently.

buy it if you have to,
exercise more if you have to,
skip breakfast and lunch if you have to,
share a piece if you have to,
but
life without pie is not a good life!
