we like it the old fashioned way
Wholesome and FRESH!


It's fair time 
 and since I learned to make muffins many moons ago
 when I was just a young chick
In 4-H
I am going to share a recipe that will make your home smell DiVINE on a summer day!

I have served it over and over for family and over night guests .
I have never entered it in the fair but I think 
it is a BLUE RIBBON RECIPE!

BANANA BREAD MUFFINS
1 cup sugar ( I use 3/4 cup and it is plenty sweet)
2 eggs
1/2 cup buttermilk or sour milk ( add 1/2 TB white vinegar to milk to sour)
1 cup mashed banana .......approx 2 bananas
( use applesauce to fill the remainder of the cup if you don't have enough bananas)
1/2 cup butter or margarine  melted
( I use 6 TB butter so I can eat more muffins with butter on top melting...  fresh out of the oven YUM)

Mix above ingredients in a medium bowl with a fork or large spoon until blended.

1/2 cup oat bran (find in the hot cereal section at your grocery store/ use dry do not cook)
1 1/2 cup white flour
1 tsp soda
1/2 tsp cinnamon
1/2 tsp scant salt

combine dry ingredients and add to banana batter mix just until blended.
butter 12 count medium size muffin tin or use paper muffin liners (makes 13 if you use the liners)
Fill muffins cups to 1/2 inch from top using all the batter.

Top with streusel topping
NUT STREUSEL TOPPING
2 TB walnuts chopped fine
2 TB wheat germ
2 TB margarine or butter
3 TB white flour
1 TB Brown sugar
1 TB white sugar
1/4 tsp cinnamon
use a pastry blender to cut in margarine with other ingredients

Press topping into muffins with the back of spoon a little bit.
Your muffin cups will be full to the brim but I promise you they will not overflow into a big mess.





BAKE 325  20-25 minutes
test with a toothpick to determine when they are done. 


To save time, make a batch of streusel topping and store in the refrigerator.
then when you want to whip up a batch of muffins it is all ready to go. 
 while your muffins are baking make a new batch of topping for the next time.

NOTE.......if you take a little girl to the fair she will not want to leave
EMERSON  with a   BIG rooster  and a  HOT  rooster.... no smiles from him

and if they didn't have a name she named them!.
